Summer Truffles

Producer: Boscovivo, Badia al Pino, Tuscany, Italy
Ingredients: Summer truffles (Tuber aestivum Vitt.), water, salt.
Size: 50g glass jar (about 4 whole truffles)

Delicious and affordable. Not as well flavoured as their more expensive winter cousins, they impart a delicately earthyness to pasta, risotto and egg dishes. Just rinse the brine off them, pat dry and shave or grate.
