It takes the stamens of about 200 purple crocus flowers to produce each gram of saffron. Fabulously expensive, this authentic spice adds colour, a grassy fragrance and a wonderfully earthy edge to rice dishes, soups etc...
La Mancha saffron is the best - you would need to use up to twice as much cheaper Iranian saffron for the same effect.
