Wild asparagus more aromatic and strongly flavoured than the cultivated variety. The Angelis family gather the newly emerged stems, cook them lightly and marinate them in fresh herbs before bottling sott'olio in best quality extra virgin olive oil. Very tasty as an antipasto on toasted bread, wild asparagus adds a delicious, creamy edge to risottos or an omelette. The oil is delicious on its own and can be used afterwards to flavour dishes. |
