Extra Vecchio means that it is aged at least 25 years. Each spring it moves from a barrel of one wood to another, each time it picks up more complex flavours. This gourmet vinegar is presented in a bottle designed exclusively for the Consorzio by Giugiaro and is bottled by the Consortium only after it has been tasted by a special commission who judges through a scoring system whether the vinegar may be bottled in this specific package and bear the tradizionale label.
Wonderfully unctuous and complex, this rare, luxurious vinegar is of absolutely stunning quality - the very best there is. Try a few drops on aged parmesan shavings, the finest fillet steak or foie gras.
