Valdespino Sherry vinegar is produced in a family owned bodega in Jerez, on the Atlantic coast of Andalucia. It is a wonderfully balanced marriage of older and younger vinegars, mixing the richness of maturity with fruity freshness. The wines that come together to produce this rich vinegar are all barrel aged and blended by the ancient Solera method to yield an average age of between 8 and 10 years. Adds sweetness and piquancy to cooked meat, soups and salads. It also makes the best sweet and sour sauce imaginable.
