A handy all-in-one pack that makes a hearty winter soup for four people. Casale Paradiso use only the finest ingredients
How to make the soup: Put the beans into a pan and cover with at least 2cm of cold water or unsalted vegetable stock. Bring to the boil, cover and simmer gently for 90 minutes or so - keep an eye on it and add more water if needed. Towards the end of the cooking time add sea salt and pepper to taste and a good glug of olive oil. Serve with some country bread or crostini.
Variations: Thinly slice an onion and fry it gently in olive oil before adding the beans, or add some chunks of chorizo sausage.
