Argan trees grow only in the area around Agadir in south west Morocco. Argan trees are even longer lived than the olive and it takes about 100kg of fruit, and 20 hours of work, to produce just 1 litre of pure argan oil. The resulting oil is expensive but has a fine, nutty flavour that is ideally suited to dressing soups and Moroccan dishes such as tagines, couscous and roasted vegetables. Mixed with fresh lemon juice it also makes an excellent salad dressing.
